We start with high-quality pork & fold through deeply roasted butternut squash, creamy goat’s cheese and smoky bacon. Brown butter brings a rich, nutty depth, while confit garlic and fresh sage keep everything firmly on the savoury side.

We have to really carefully balance our homemade pumpkin spice seasoning, a carefully balanced blend of nutmeg, mace, allspice, cinnamon and clove that should add gentle warmth and fragrance without overpowering the meat. Think autumn roast dinner, not pumpkin-spiced latte.

The result is rich, smoky and savoury, with little pockets of tangy goat’s cheese, sweet caramelised squash and bacon running through every sausage, finished with that unmistakable warming hit of autumn spice.
