We use hand-picked fennel pollen for its bright, sweet anise hit — it really packs a punch. It’s an expensive ingredient, but absolutely essential for the flavour explosion that defines these sausages.
Finished with a splash of premium Gavi di Gavi white wine for freshness and balance, they’re juicy, fragrant and seriously moreish.
