Some of the best sausage ideas start with a carefully considered development session. This one started with Aiden, a drink and a conversation down the local pub.

Inspired by the flavours of Bonfire Night, we've taken our high meat content pork sausage & loaded it with chunks of apple and pockets of salted caramel, before bringing in Skeleton Crew's Toffee & Honeycomb Spiced Rum for rich notes of caramel, warming spice and dark sweetness.

A touch of treacle, gentle autumn spice and smoke brings everything together. The result is sweet, smoky and savoury, with juicy pork at its heart, little hits of apple and molten salted caramel running through it, and that unmistakable spiced-rum warmth in the background.

We are using skeleton crew spirits to collaborate with as they are small, local, independent, just like us.
