The Birria Taco Sausage takes everything that makes a proper birria taco so good and packs it into one seriously indulgent sausage.
 
Made with a rich beef and pork fat base, it's loaded with chunks of smoked, slow-braised beef short rib and chuck, then mixed with our thick, reduced birria consommé, made with guajillo and chipotle chillies, achiote, garlic and warming Mexican spices.
 
We fold through charred white onion, fresh coriander and lime zest for freshness, before adding mozzarella and mature cheddar for that rich, molten quesabirria finish.
